Teacher/Mom Melanie (Miles, WW) made gluten free noodles! Here’s the recipe.

GLUTEN FREE LO MEIN NOODLES

INGREDIENTS:

  • 8 ounces Tinkyada gluten free spaghetti
  • 1 tablespoon olive oil
  • 2-3 cloves garlic, minced
  • 2 cups mushrooms, sliced
  • 1 bell pepper, chopped
  • 1 carrot, chopped
  • 1/2 cup snow peas
  • 2 cups chopped broccoli
  • 1 stalk celery, chopped
  • (*can substitute other veggies and/or add meat)

SAUCE:

  • 2-3 tablespoons gluten free reduced sodium tamari or soy sauce
  • 2 teaspoons brown sugar
  • 1-2 teaspoon sesame oil
  • 1/2 teaspoon ground ginger

DIRECTIONS:

  1. In a small bowl, whisk together tamari/soy sauce, sugar, sesame oil, ginger; set aside.
  2. In a large pot of boiling water, cook noodles according to package instructions; drain well.
  3. Heat olive oil in a large skillet or wok over medium high heat. Add garlic, mushrooms, bell pepper, celery, broccoli and carrot. Cook, stirring frequently, until tender, about 3-4 minutes. Stir in snow peas, cook another 2-3 minutes.
  4. Stir in noodles and sauce mixture, toss to combine.

Workshop Today!

Today, Roleen held the “A Culture of Welcoming” workshop for 16 educators. This series of workshops, primarily presented by teachers to teachers (and free to parents) helps collect the funds we need to support the work with our West Coast Collaborative (WCC) and with Reggio Children. This year, we entered a 3 year contract that has us working directly with Tiziana Filippini (Pedagogista) and Loretta Bertani (Aterlierista). Via skype calls and personal visits, we are sharing documentation and receiving input that has us looking deeper into our work. It’s a learning experience that keeps our passion for this educational approach strong and meaningful and we look forward to sharing this process with you. Their first visit as a team will be on Friday, February 14th, and they will be observing the classrooms. We will be closing at 12:15 so the teachers can come together and reflect on what they saw. It’s a big deal! Thanks to the Hospitality Team for providing lunch.
