Sushi with Sari

 It was amazing how the children seemed so engaged and excited with the entire process of rolling sushi, wanting to learn Japanese words, understanding all of the sushi making steps and then, seeing how many of them did not want to leave their positions as sushi chef! It was apparent that sushi rolls are eaten in many NSW families' homes and it was fun to see that it is a "comfort food" to many! Even the children who never tried sushi before participated with curious eyes and tasted their creation at the end, usually with a comment like, "Hey that's pretty good!". Although I thought that most of the children would stay away from veggies other than cucumbers, they almost all stuffed their sushi with every vegetable option and tofu and gobbled it up with happy hearts. I am certain the process of creating something beautiful with your own hands lends itself to being ingested more readily by children! So many of the children (and teachers!) came by to make the sushi rolls and eat them… it's a testament to the open-mindedness and adventuresome spirit of the NSW way!

To make the vegetable sushi rolls, the children:

1.) Place nori (seaweed) on their bamboo mats

2.) Wet hands with water/sushi vinegar mixture

3.) Spread seasoned sushi rice on the nori

4.) Place cucumbers, tofu, carrots, asparagus and/or avocado on top of the rice. Sprinkle with sesame seeds if desired

5.) Roll and squeeze sushi with the bamboo mat

6.) Cut with wet knife into small pieces

7.) Dip in shoyu (soy sauce) and wasabi and enjoy!
